Whenever you crave something light this is the ideal lunch. Hüttenkäse (cottage cheese) isn’t the typical cheese as it’s low in fat and actually it has a boring flavour which has an advantage because that means you can use it in many different ways. I didn’t like it at first, but after experimenting a bit I started to appreciate the texture and bland taste.
Next to that it’s low in fat and calories, it’s full of protein and B12 which makes it a beautiful light healthy cheese. Topped on a slice of toasted rye bread makes it absolutely one of my favourite simple lunch options together with some fruit on the side.
2 slices of bread
2 tbsp (heaped) hüttenkäse
pinch of salt and pepper
fresh herbs: chives, parsley, dille, thyme, oregano etc.
Toast the slices of bread and top with hüttenkäse. Season the cheese with some salt and pepper and sprinkle some chopped fresh herbs on top.
