CHRISTMAS SPECIAL: I love starting my day with healthy breakfasts “desserts” with lots of fruits and chocolate. This year, for Christmas morning I made something savoury as I’ve been eating enough chocolates, cakes and other sweets the last couple of days.
My dearest Aussie friend, Emily, stayed overnight after a delish Slow Roasted Beef dinner with Christmas Eve and I know how much she loves eggs and salmon, so I decided to make a savoury BREAKFAST PIZZA for breakfast. I used pita bread, but you can also make these with whole wheat wraps.
SALMON BREAKFAST PIZZA. – serves 1
2 pita bread
1 tsp Virgin Olive Oil
salt and black pepper
1/2 cup Greek yogurt (or: 1/4 cup yogurt with 1/4 cup cream cheese)
100 gr smoked salmon
1/2 red onion
1 tbsp capers
herbs: chives and/or dille
Preheat the oven to 200 C degrees (convention oven – fan) and slice half of a red onion lengthwise.
Place 2 pita bread (or wrap) on a baking tray covered with baking paper, drizzle pitas olive oil and sprinkle with some salt and pepper. Put in the oven for +/- 6 minutes (for wraps: +/-10 min).
Meanwhile your pita-base is getting ready beat greek yogurt (optional: cream cheese) with a squeeze of lemon. Cut your lemon in halves and then in quarters (big wedges) and squeeze out lemon juice of a quarter lemon. Save the other halve/quarters of the lemon to serve together with your pizza.
Once the pita is done let cool for a bit, but it should be still warm. Spread your pizza sauce over your pita and decorate with teared pieces of salmon, your sliced red onion and some capers. Top your pizzas with some herbs such as chives and/or dille and if you’d like you can finish with some black pepper.
Serve your breakfast pizza with the lemon wedges. To keep the sweet-tooth happy you can also serve the pizza with a bowl of fruits on the side.
