Pizzas are my favourite food and there is no better way to start your day right and eat a fruity pizza for breakfast. Health-ier and simple. Don’t they look colorful and gorgeous?!

whole-wheat wrap
2 tbsp honey
1 tbsp fine sugar
splash of water

1/2 cup Greek yogurt
1 tsp cinnamon
drizzle of honey or vanilla essence

1 Banana
1/2 tsp cornstarch (to protect your fruit)
1 tsp cinnamon
1 tbsp butter
drizzle of honey
handful of walnuts

1/4 cup strawberries
1/4 cup blueberries
handful of almonds
mint leaves for decoration

Lindt chocolate (see picture)
or any you like

Preheat your oven to 200C degrees (convection oven-fan) and mix together the honey and sugar. If the mixture becomes to thick then use a bit of water, but watch out it doesn’t become too runny as you don’t want to soak your wrap.

Place wrap on a baking tray covered with parchment paper. Spread the mixture over your wrap and put it in the oven for +/- 10 minutes until the wrap became crispy and the sugar is caramelising. Then take the wraps out of the oven and let cool for a bit.

Meanwhile make your pizza sauce by combining greek yogurt, cinnamon and honey and spread over wraps once they are cooled down a bit, but still warm.

Then it’s time for your chose of toppings! I used two different toppings that I made as follows:

Topping 1 – warm up a regular sauce pan over medium heat and bake your walnuts a few minutes. They will have more flavour when heated through (you may also chose to add them unbaked on top later). Take them out and set aside. Cut the banana in slices and mix in a bowl with some cornstarch and cinnamon. Then add butter to your frying pan and wait until the butter is melted and little bubbles appear. That’s the time to add the banana mixture to the frying pan and bake until the bananas are browned, be careful when turning because they may fall apart. Drizzle some honey on top, add the walnuts and heat through. Be careful with the hot honey and pour over your pizza.

Topping 2 – wash the blueberries and strawberries. Slice the strawberries to an easy bite-size. Top your pizza with the berries, almonds, and some mint leaves for decoration.IMG_0897
